Smoky Nut Mix
These delicious smoky nuts make a simple edible gift idea and are easily customisable to please all.
Smoky Nut Mix
Makes 1 medium jar
Gluten free, dairy free option, egg free
Ingredients:
- 2 cups mixed nuts - I used a combination of cashews, macadamias and almonds 
- 2 tablespoons unsalted butter, melted (substitute for a light olive oil if dairy free) 
- 1 tablespoon fresh rosemary, finely chopped 
- 1 teaspoon smoked paprika 
- 1 teaspoon coconut sugar 
- 1/2 teaspoon salt 
Instructions:
- Preheat your oven to 160°C 
- In a large bowl, combine the mixed nuts. 
- Melt the butter in a small saucepan on the stovetop. 
- In a small bowl, mix together the melted butter, smoked paprika, coconut sugar, and salt. 
- Pour the seasoning mixture over the mixed nuts and toss them until the nuts are evenly coated. 
- Sprinkle with chopped rosemary and stir to cover. 
- Spread the nuts in a single layer on a baking sheet lined with baking paper. 
- Bake for about 15-20 minutes, stirring once or twice during baking. Keep a close eye on them to prevent burning. 
- Allow the nuts to cool completely on the baking tray. They will continue to crisp up as they cool. 
- Once cooled, transfer the nut mix to a glass jar where they will keep fresh in the pantry for a couple of weeks.
