Salted Caramel Gummies
These gummies are one of my kids all time favourites. They remind me of a chewy caramel lolly but without all the nasty ingredients.
Salted Caramel Gummies
Makes 12 large (silicone ice-cube mould size) squares
Gluten free, dairy free, egg free, nut free
Ingredients:
- 1 cup dried dates 
- 1/2 cup coconut cream 
- 1/2 cup water 
- 1/2 tsp vanilla powder or sub - 1 tsp vanilla extract 
- 1/4 tsp salt 
- 2 tablespoons plus 1 teaspoon grass fed gelatin 
Instructions:
- Blend dates, coconut cream, 1/4 cup of the water, vanilla and salt in a high-speed blender or food processor until smooth and creamy. 
- Transfer mixture into a medium saucepan. 
- In a small bowl, mix gelatin with the remaining water until the gelatin has soaked up all the liquid. 
- Add the gelatin mixture to the saucepan with the date mixture, heat gently and stir until gelatin has dissolved. 
- Pour into silicone ice-cube moulds or a container lined with baking paper and place in the fridge until set
