Banana Crème Caramel Gummies
These gummies are a cross between a banana custard and a crème caramel. They are full of good fats, protein and gut loving gelatin, which makes them great for a snack or a bite size dessert.
Banana Cream Caramel Gummies
Makes 20-24 large gummies
Gluten free, dairy free option, nut free
Ingredients:
- 3 bananas 
- 1 x 400ml can coconut milk 
- 2 eggs 
- 2 tablespoons coconut oil - or butter if dairy is tolerated 
- 2 tablespoons coconut sugar 
- 1/2 tsp vanilla powder (optional) 
- 1/4 tsp salt 
- 4 tablespoons grass fed gelatin 
Instructions:
- Blend the bananas with the coconut milk. 
- Add to a medium saucepan then sprinkle over the gelatin and leave for a minute until the gelatin has softened. 
- Add the rest of the ingredients to the saucepan and heat gently on low to medium. Whisk the mixture continuously until it has thickened enough to coat the back of a spoon. 
- Pour mixture into silicone moulds and place in the fridge until set. These will last up to 4 days in the fridge. - Notes: - Thermomix instructions - blend up the bananas with the coconut milk for 20 seconds on speed 7, scrape down the sides then add the rest of the ingredients and cook for 7 minutes, 90 degrees, speed 4.
