Easy One Pan Sausage And Veggie Bake
Did you know you can bake sausages in the oven? If you’re looking for a fuss-free, family-friendly dinner that’s full of flavour, this one-pan sausage bake is a game-changer.
It’s one of my favourite end of the week meals - just toss everything in a dish, let the oven do the work, and enjoy a wholesome meal with minimal washing up. Even better, it’s super versatile. You can easily switch up the flavours by using different sausages, veggies, herbs, and spices depending on what you’ve got in the fridge or pantry.
Easy One Pan Sausage And Veggie Bake
Gluten free, dairy free, nut free, egg free
Serves 4
Ingredients:
4–6 good quality gluten free sausages
2 tomatoes, roughly chopped
1 red onion, sliced
2 cloves garlic, diced
1 capsicum, roughly chopped
1 zucchini, roughly chopped
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp smoked paprika
1 tsp dried thyme (or herbs of choice)
Salt and pepper, to taste
Instructions:
Preheat the oven to 180°C.
Arrange the sausages and vegetables in a large baking dish.
Drizzle with olive oil and balsamic vinegar, then sprinkle with smoked paprika and thyme.
Toss everything together until evenly coated.
Bake for 20–30 minutes, or until the sausages are golden and cooked through, and the veggies are tender.
Season with salt and pepper, then spoon the pan juices over everything before serving.
Serving Suggestion
We love slicing the sausages and serving this Buddha bowl-style with quinoa and your favourite condiments. You could also pair it with mashed potatoes, rice, or crusty gluten-free bread to soak up the delicious juices.
