Lemon Butter Bombs
These lemon butter gummies are one of my all time favourites. I’ve been making them for years now and my kids always request them.
Lemon Butter Bombs
Gluten free, dairy free option, nut free
Ingredients:
1/3 cup butter, ghee or coconut oil for dairy free
2 eggs
2 tablespoons of honey
2 tablespoons gelatin mixed with 2 tablespoons of water
Juice and zest of 1 lemon
Instructions:
Melt butter, ghee or coconut oil in the saucepan over low heat.
Add in the eggs, honey, lemon juice and zest.
Meanwhile mix the gelatin and water in a small bowl until combined. Add this mixture to the saucepan with the rest of the ingredients.
Heat gently on low to medium heat and whisk constantly until the mixture has thickened (this will take approximately 8 minutes).
Pour into silicone moulds or a container lined with baking paper and place in the fridge until set.
Thermomix Instructions:
Insert the butterfly attachment into the Thermomix bowl.
Place all ingredients into the bowl and cook for 8 mins, 80 degrees, speed 3.
Pour into silicone moulds or a container lined with baking paper and place in the fridge until set.
Notes:
These are equally delicious with limes
