Mango Cream Two-Layer Gummies
Mango season is here, and I couldn’t be more excited! This is one of my favourite mango recipes to make this time of year. These two-layer mango cream gummies are the perfect balance of fruity and creamy, and they’re always a hit with the kids. Plus, they’re way easier to make than they look!
Mango Cream Two-Layer Gummies
Gluten free, dairy free, nut free, egg free
Ingredients:
Mango Layer
- 1 cup mango flesh (roughly 2 large mango cheeks) 
- 1/2 cup water 
- juice of half a lime 
- 1 tablespoon honey 
- 3 tablespoons gelatin 
Cream layer
- 1 cup coconut cream 
- 1 tablespoon honey 
- 2 tablespoons gelatin 
Instructions:
Mango layer
- To a blender add the mango, water, lime juice and honey and blend until smooth. 
- Pour the mixture into a small saucepan then sprinkle over the gelatin. 
- Leave to bloom for a minute then heat gently and stir until gelatin has dissolved. 
- Pour into moulds and only fill halfway then place in the fridge until just set. 
Cream layer
- Pour the coconut cream into a saucepan and sprinkle over the gelatin. 
- Leave to bloom, then add the honey and heat gently until gelatin has dissolved. 
- Pour mixture over the mango layer and place in the fridge for a few hours or until set. 
- Pop out of the moulds and enjoy!
