Creamy Mango Gummies
This is another one of my favourite recipes to try this mango season. These creamy mango gummies are sweet and creamy with a slight tang. They are quick to make and come together in one simple layer.
Creamy Mango Gummies
Gluten free, dairy free, nut free, egg free
Ingredients:
- 1 cup mango flesh (approx 1 whole mango) 
- 1 cup coconut cream 
- Juice of half a lime 
- 2 tablespoons of liquid sweetener of choice 
- 3 tablespoons grass fed gelatin 
Instructions:
- To a blender add mango, coconut cream and lime juice and blend until smooth and creamy. 
- Transfer mixture to a medium saucepan and sprinkle over gelatin. 
- Leave for a minute to ‘bloom’ (gelatin will soak up the liquid). 
- Heat gently and stir until gelatin dissolves. Stir though the sweetener and adjust if needed. 
- Pour into silicone moulds of choice or a large container lined with baking paper. 
- Place in the fridge until set. 
Notes:
- The colour/flavour will vary slightly depending on the type of mango you use.
