Christmas Inspired Yoghurt Bark

Gluten free, dairy free option, egg free, nut free - depending on choice of toppings

Makes 6-8 shapes

Ingredients:

  • 1 cup yoghurt of choice (Greek, coconut, or any thick yoghurt works well)

  • Toppings of choice — I used:

    • Goji berries

    • Frozen mixed berries

    • Crushed pepitas

    • Desiccated coconut

  • Christmas-themed cookie cutters

  • Paddle pop sticks

    Instructions:

  • Line a baking tray with baking paper.

  • Place your Christmas cookie cutters onto the tray.

  • Slide a paddle pop stick under each cookie cutter so it sits in the centre.

  • Spoon yoghurt into each cutter, using the back of a spoon or your finger to spread it out and fill the shape evenly.

  • Sprinkle over your chosen toppings.

  • Leave the cookie cutters in place and transfer the tray to the freezer.

  • Freeze until completely set.

  • Remove from the freezer and allow to soften for 1–2 minutes.

  • Gently push the yoghurt shapes out of the cookie cutters.

  • Serve immediately or store in the freezer until needed.

    Notes:

    • Use a thick yoghurt so the shapes hold their form well.

    • Swap the toppings for whatever you have on hand — freeze-dried berries, chopped nuts, seeds, or dairy-free chocolate all work well.

    • If you don’t have cookie cutters, you can spread the yoghurt into one large slab, add toppings, freeze, and then break into pieces.
