Chai Gummies

Gluten free, dairy free, nut free, egg free

Makes 20-25 gummies

Ingredients:

  • 1 cup coconut cream

  • ½ cup dried dates

  • 1 tablespoon coconut sugar (or swap for honey or maple syrup)

  • 2 teaspoons chai pre-mix powder

  • 2 tablespoons gelatin powder

Note: The chai mix already contains a little gelatin, so this amount has been balanced to get the perfect texture—soft, creamy, and not too firm.

Instructions:

  • Blend the coconut cream, dates, coconut sugar, and chai powder on high speed until smooth and creamy.

  • Pour the blended mixture into a medium saucepan.

  • Sprinkle the gelatin over the surface and let it sit for 1–2 minutes to bloom (soften).

  • Gently heat over low–medium heat, stirring until the gelatin dissolves completely.

  • Pour into silicone moulds or a container lined with baking paper.

  • Refrigerate for 2–3 hours or until set.

    Thermomix Method:

  • Blend coconut cream, dates, coconut sugar, and chai mix for 1 minute / Speed 9.

  • Scrape down the sides, sprinkle over the gelatin, and cook for 3 minutes / 55°C / Speed 3.

  • Scrape down again and cook for another 1 minute if needed.

  • Pour into moulds or a lined container and refrigerate until firm.

    Notes:

  • No chai pre-mix? I have a similar version with individual spices inside my Gummy Guide ebook if you'd prefer to skip the mix.

  • Want a sweeter gummy? Add an extra tablespoon of coconut sugar, or swap for maple syrup or honey.

  • Kid-friendly version: Start with just 1–1½ teaspoons of chai mix if your little ones prefer a milder spice.
