DIY Gut Friendly Chai-Latte Mix

If you’d prefer a chai over a hot chocolate you’re going to love my DIY gut friendly chai latte mix. It’s spiced, creamy, naturally sweetened - and best of all, gut-friendly thanks to the addition of gelatin.

Many store bought chai pre-mixes are packed with refined sugar and additives. This DIY version not only saves you money, but it also gives you full control over the ingredients, sweetness level, and spice strength.


DIY Gut Friendly Chai-Latte Mix

Gluten free, dairy free, nut free, egg free

Makes 1 medium sized jar

Ingredients:

  • 4 tablespoons cinnamon powder

  • 4 tablespoons ginger powder

  • 2 tablespoons cardamom powder

  • 2 teaspoons clove powder

  • 2 teaspoons nutmeg powder

  • A couple of cracks of black pepper

  • 1/4 cup coconut sugar

  • 1/2 cup gelatin powder

    Optional add ins:

  • Grated star anise - this is highly recommended - finely grate a star anise until you have around 1/2 to 1tsp of powder

  • 1 tablespoon vanilla powder

  • 2 tsp turmeric powder

Instructions:

  • Place all ingredients in a bowl and stir to combine evenly.

  • Transfer to a clean jar or airtight container.

  • Store in a cool, dry place—this mix will keep well for several months.

    To make a gut friendly chai latte:

  • Add 1–3 teaspoons of the mix to a mug of your favourite milk (adjust based on cup size and how strong you like it).

  • Heat gently in a saucepan or your Thermomix until warm.

  • Optional: Add a spoonful of butter or coconut oil for extra creaminess and healthy fats.

  • Blend with a stick blender or in your Thermomix for a frothy finish.

    Thermomix Method:

  • Heat: 3 minutes / 60°C / Speed 3

  • Froth: Turn to Speed 6 for the last 10 seconds

    Notes:

  • Want to use this in cold drinks, smoothies, or baking?
    Swap the gelatin for collagen powder, as gelatin needs heat to dissolve.

  • Making it for kids or sensitive taste buds?
    Start with just 1 teaspoon of the mix per cup and adjust to taste.

  • Storage tip:
    Make sure your jar is airtight and kept in a cool, dry spot for best shelf life.

Why Add Gelatin?

Gelatin adds protein and a gentle gut-healing boost to your chai. It can help support digestion, improve skin and joint health and adds a lovely richness to the drink. If you prefer a vegan version or want to keep the mix more versatile, simply leave it out or swap it for collagen or plant-based alternatives.
