Mango Passionfruit Gummies
Gummies are one of my favourite things to make for my kids. These mango passionfruit ones are a favourite to make in summer when mangoes are in season.
Mango Passionfruit Gummies
Makes 20-24 gummies
Gluten free, dairy free, egg free, nut free
Ingredients:
- The flesh from 1 mango cheek and one seed 
- 1/2 cup of water 
- 2 passionfruits 
- 3 tablespoons of gelatin 
- 1-2 tablespoons of honey or preferred liquid sweetener 
Instructions:
- Blend the mango and water until smooth. 
- Pour the mixture into a saucepan and sprinkle the gelatin evenly over the surface. 
- Leave for a minute or 2 until the gelatin has started to soak up the liquid. 
- Turn on the heat and add the passionfruit pulp and honey. 
- Stir gently until the gelatin has dissolved. 
- Pour the mixture through a strainer to catch the passionfruit seeds. Discard the seeds then pour into silicone moulds of choice. 
- Place in the fridge for a few hours or until set. - Notes: - Gummies can melt at high temperatures so if you’re packing them in kids lunchboxes make sure you pack an ice-brick to keep them cool. - These gummies last about a week in the fridge or you can freeze them for up to 3 months.
