Mango Coconut Ice-Creams
When mangoes are in season these are my favourite things to make for the kids.
Mango Coconut Ice-Creams
Makes 6-8 (depending on the size of your moulds)
Gluten free, dairy free, nut free, egg free
Ingredients:
Mango layer
- 1 mango 
- 1/4 cup water 
- juice of half a lime 
- 1 tablespoon honey 
- 1 tablespoon collagen powder (optional) 
Coconut layer
- 1 cup coconut cream 
- 1 tablespoon honey 
- 1 tablespoon collagen - powder (optional) 
Instructions:
- First make the mango layer. Place all the mango layer ingredients into a blender and blend on high speed until smooth. 
- Pour into ice block moulds, only filling halfway and place in the freezer for around 30 minutes or until just set. 
- Then make the white layer. Blend all the white layer ingredients together until smooth then pour on top of the mango layer. 
- Place back in the freezer for a couple of hours or until frozen. 
Notes:
To get some probiotics in these, swap the water for kefir and swap some of the coconut cream for coconut yoghurt.
