Blueberry Coconut Yoghurt Gummies
These gummies are super simple to make and make the perfect snack for little ones. You can swap the blueberries for strawberries, raspberries or a combination of them all.
Blueberry Coconut Yoghurt Gummies
Makes 20-24 (depending on the size of your moulds)
Gluten free, dairy free, egg free, nut free
Ingredients:
- 1 cup coconut cream 
- 1/2 cup coconut yoghurt 
- 1 cup blueberries (fresh or frozen) 
- 3 tablespoons grass-fed gelatin powder 
- 2 tablespoons honey 
- Zest and juice of half a lemon 
- 1/2 tsp vanilla powder or sub 1 tsp vanilla extract 
Instructions:
- Place blueberries, coconut cream, lemon juice and zest, vanilla and honey into a blender and blend until smooth. 
- Pour mixture into a medium saucepan, sprinkle over gelatin and leave to bloom (this should only take a minute or two). 
- Stir over a low to medium heat to gently dissolve the gelatin. 
- Once gelatin is dissolved take off heat and whisk through yoghurt. 
- Pour into silicone moulds and place in fridge for a couple of hours or until set. 
Notes:
