Berry ‘Cheesecake’ Ice-creams
The weather is warming up here in QLD and my kids have been requesting ice-creams for an afternoon snack. These berry ones are our current favourites and remind us of a berry cheesecake but without the dairy.
Berry ‘Cheesecake’ Ice-creams
Makes 5 large ice-creams
Gluten free, dairy free, egg free
Ingredients:
- 1 cup berries fresh or frozen (I used frozen mixed berries) 
- 1 cup coconut yoghurt (or can substitute half coconut yoghurt and half coconut cream) 
- 1/2 cup cashews 
- Juice and zest of half a lemon 
- 1 tablespoon collagen powder (optional) 
- 1-2 tablespoons of honey 
Instructions:
- Blend all ingredients together on high speed until creamy. 
- Pour into ice-cream moulds of choice and place in the freezer until set.
