Pear Crumble Bars

These pear crumble bars are my new favourite thing to make. They are perfect for a snack on their own or pair them with ice-cream or custard and they make a delicious dessert!


Pear Crumble Bars

Makes 8 bars

Gluten free, dairy free option, egg free

Ingredients:

For the base and topping:

  • 1 cup almond meal

  • 1/4 cup coconut flour

  • 1/2 cup chopped cashews or nuts of choice

  • 2 tablespoons coconut sugar

  • 50g butter or coconut oil for dairy free

  • 1 tsp vanilla extract

    For the filling:

  • 3 pears peeled and diced

  • 1 tsp lemon juice

  • 2 teaspoons gelatin mixed with 1 tablespoon of water

  • 1/2 tsp cinnamon

  • optional: 1 tablespoon coconut sugar

Instructions:

  1. Preheat oven to 170 degrees C (fan forced or 180 for non fan forced) and line a standard loaf tin with baking paper.

  2. Place all the base ingredients into a food processor and process until it comes together.

  3. Put 3/4 of a cup of the mixture aside for the topping and press the rest into the lined loaf tin, pressing down with your fingers until all is flat and even.

  4. For the filling, place the diced pears into a medium saucepan with the lemon juice, cinnamon and the gelatin mixture. Heat gently and stir for a few minutes until the gelatin has dissolved and the pears have softened slightly.

  5. Place the filling mixture on top of the base then crumble the remaining mixture on top, pressing down gently with your hands.

  6. Bake at 170 for 20 minutes or until golden brown on top.

  7. Leave to cool in the loaf tin then place in the fridge to cool completely. Once cool slice into bars.
